Baked Fish with Shrimp

3 Tbls butter
2 Tbls Seafood Coating Mix
1 tsp salt
black pepper to taste
1 cup Milk
2 lbs. fish fillets, red snapper is a great choice
½ lb cooked bay shrimp
¼ cup grated parmesan cheese

Preheat oven to 325 degrees.

In small saucepan, melt butter over medium low heat. Whisk in coating mix and salt and pepper to make a paste. Gradually whisk in milk. Stirring constantly, cook until sauce is thick enough to coat the back of a spoon.

Prepare a baking pan with cooking spray and lay fillets in one layer. Season lightly with salt and cover with the shrimp. Pour white sauce over shrimp. Sprinkle with the parmesan cheese. Bake uncovered for 25 minutes.

Simple and fantastic.
