Flounder with Spinach-Ricotta Filling

2 lbs flounder fillets
2 10-oz pkgs frozen chopped spinach, thawed and drained
1 cup ricotta cheese
½ tsp dried basil
2 tbls melted butter
2 tbls flour
Salt & pepper to taste
1 cup milk
¼ cup grated parmesan cheese
½ cup dry white wine
1 tsp lemon juice

Preheat oven to 350 degrees. Arrange half of the fillets in greased baking dish. In another bowl, mix drained spinach, ricotta cheese, and basil. Spoon over fillets and top with remaining fillets. Blend butter, flour, and S & P in saucepan. Wisk in milk and cook over low heat stirring constantly until mixture thickens. Add cheese, wine, and lemon juice. Spoon mixture over fillets. Bake for 20 minutes or until fish flakes easily. Sprinkle with additional parmesan cheese and broil until lightly browned.
