Halibut Supreme

2 Lbs. Halibut steaks
1 cup shredded jack cheese
1/2 cup mayonaise
1/2 cup sour cream
2 Tbls. A/P flour
1 1/2 tsp. lemon juice
1 Tbls. lemon zest
1 tbls. diced sweet onion
salt & pepper to taste

Preheat oven to 425 degrees. Lightly grease a medium baking

dish. Mix together the jack cheese, mayo, sour cream, flour,

lemon juice, zest, and onion. Arrange the halibut steaks in the

baking dish and salt & pepper to suit your taste and cover with

the cheese mixture. Bake for 10 minutes at 425, then reduce heat

to 350 degrees and bake for another 15 minutes or until fish flakes

easily. Serve with any kind of rice and some steamed vegetables.
