Fillets Italiano

2 tablespoons olive oil
1 medium onion thinly sliced
2 gloves garlic, minced
1 14.5 ounce can diced tomatoes
½ cup sliced black olives
1 tablespoon chopped parsley
½ cup dry white wine
Salt and pepper to taste
1 lb fish fillets – your favorite

In large frying pan, sauté garlic and onion in olive oil until softened. Stir in tomatoes, olives, parsley and wine and simmer for 5 minutes. Add salt and pepper to taste. Add fillets to tomato mixture and simmer for about 10 more minutes. Delicious served over rice.
