

One Dish Italian Fish
2 cups white Minute rice, uncooked
½ Cup water
salt and pepper
1 lb. white fish fillets such as halibut, cod, or tilapia
1 can (14 ½ oz) diced tomatoes, undrained
¼ Cup Kraft Zesty Italian dressing
½ Cup shredded mozzarella cheese
Mix rice and water in shallow microwaveable dish. Season fillets with salt & pepper and arrange over rice. Pour tomatoes with their liquid and the salad dressing over the fish. Cover loosely with plastic wrap. Microwave on high for 8 minutes. Remove plastic wrap and sprinkle with cheese. Cover dish loosely with plastic wrap again and microwave for another 4 minutes or until fish flakes easily.
Delicious with a nice salad and some warm crusty bread.
