Angel Hair Pasta with Shrimp and Basil

1/4 cup olive oil

1 8-oz package angel hair pasta

1 tsp chopped garlic

1 lb large shrimp-peeled and devained

2-28-oz can italian style diced tomatoes, drained

1/2 cup dry white wine

1/4 cup chopped parsley

3 tbls chopped fresh basil

3 tbls freshly grated parmesan cheese

Cook pasta in large pot of boiling water with 1 tbls of olive in the

water. Cook al dente and place in colander and give a quick rinse

with cold water.

Heat remaining olive oil in 10-inch skillet over medium heat. Cook garlic

in hot oil for 1 minute stirring constantly. Add shrimp and cook for 3-5

minutes. Remove shrimp from skillet and set aside.

Stir in tomatoes, wine, parsley, and basil into the skillet. Continue

cooking stirring occasionally until liquid is reduced by half, about 8-12 minutes.

Add shrimp and continue cooking until the shrimp are heated through, about 2-3

minutes. Add pasta to skillet and toss until pasta is hot and covered with sauce.

Sprinkle with parmesan cheese.

Serve with nice salad and warm crusty bread. Serves 4
