New Orleans Catfish Fries

(serves 4)

2 (10 oz) packages frozen catfish fillets

2 tsp cayenne pepper or to taste

1 Cup Corn Flour

Salt & Pepper to taste

1 Quart oil for frying

Cut partially frozen catfish fillets into ¼ inch strips. Dust

with cayenne pepper and gently toss together till the strips

look pink. Place oil in deep fryer and heat to 365 degrees.

Place flour in large bowl or plastic bag and season with salt

& pepper. Coat fish strips with seasoned flour until evenly

covered. Deep fry in hot oil and fry for about 3 minutes.

Fish should be golden on outside and moist and flakey inside.

Can be made with other types of fish as well.
