Cod au Gratin

2 lbs cod fillets

3 tbls butter

6 tbls flour

2 cups milk

salt and pepper to taste

1 ½ cup shredded cheddar cheese

Preheat oven to 350 degrees. Spray a 8X12 inch PAM.

Bring a large pot of lightly salted water to a boil. Add

cod fillets and cook for 4 minutes. Drain.

Melt butter in medium saucepan. Mix in flour and milk,

cook over medium heat until thickened. Add salt and

pepper. Flake fillets into baking dish, alternating layers

with sauce. Sprinkle top with shredded cheese. Bake for

20-25 minutes or until cheese is browned.

Delicious served with as assortment of steamed veggies.
