

Pan Fried Halibut Steak with Light Green Sauce
4 8-ounce Halibut Steaks
salt and pepper to taste
1 tsp garlic powder
½ cup flour for dusting
¼ cup melted butter
¼ cup dry white wine
1 lemon juiced
½ cup heavy cream
2 tbls finely chopped fresh parsley
4 tbls finely chopped fresh basil
2 tbls drained capers
Rinse halibut steaks and pat dry. Season with the salt, pepper, and garlic powder, then dust with the flour. Melt butter in large skillet over medium heat. Fry the halibut in the butter for 4-5 minutes until nicely browned. Remove from skillet and keep warm. Reduce the heat and add the wine to pan, scraping all the browned bits stuck to the bottom of the frying pan. Mix in the lemon juice and then the heavy cream. Simmer for about 3 minutes until mixture starts to thicken. Add the parsley, basil, and capers and stir for another minute. Serve the halibut with the sauce spooned over it. Garnish with more parsley if desired.
Delicious served over wild rice or couscous.
