

Halibut Florentine
2 Cups shredded cheddar cheese
1/2 Cup grated Parmesan cheese
2 Cups Milk
1/4 Cup Flour
1/4 Cup water
2 10-oz. Pkgs frozen chopped spinach
4 6-oz. Halibut steaks
salt & pepper to taste
Pre heat oven to 350 degrees
Over medium heat, combine cheeses and milk in saucepan
and cook until well blended. Mix in flour and water and stir
constantly until thick and smooth.
Spray bottom of baking dish with PAM and arrange fillets. Cover
with the spinach and season to taste. Pour cheese mixture over
fish and bake for 45 minutes.
