

Lemon Broccoli Fish
1 lb. fish fillets (your favorite)
2 Tbls Lemon Juice
salt & pepper
10-oz package frozen broccoli spears, thawed
4 oz. Velveeta Cheese, cut up
¼ cup milk
½ tsp lemon peel
¼ tsp dill weed.
Sprinkle each fillet with lemon juice and season with salt and pepper. Arrange broccoli spears on narrow end of fillet and roll up. Secure with toothpick. Place seam side down in 10X6 microwavable baking dish and cover. Microwave on high for 5-7 minutes or until fish flakes easily with fork.
Microwave the rest of the ingredients in a small bowl for 2-3 minutes or until sauce is smooth, stirring after each minute. Remove toothpicks and serve with sauce.
