Pan Fried Whole Trout

4 whole (12 0z.) trout, cleaned with heads and tails on

½ cup flour

½ cup cornmeal

1/8 cayenne pepper

1 tsp salt

1 tsp pepper

3 tbls olive oil

2 lemons- cut into wedges for garnish

Remove gills from fish and rinse fish under cold water.

Heat oil in large skillet over medium heat.

In a shallow dish, combine flour, cornmeal, salt and peppers. Dredge fish in flour

Mixture and fry in hot oil approx 4-6 minutes on each side. Garnish with lemon wedges.
