Pecan Catfish

½ cup cornmeal

1 tsp salt

¼ tsp black papper

1 ¼ catfish

3 tbls oil

½ cup finly crushed pecans

lemon wedges for garnish

fresh parsley for garnish

Preheat oven to 500 degrees. IN large bowl, mix cornmeal

And salt & pepper. Dip catfish in mixture and coat well.

Place catfish on flat greased baking sheet. Pour oil over fish.

Bake in preheated oven for 15 minutes or until fillets flake easily.

Sprinkle fish with pecans towards end of cooking period.

Garnish with lemon and parsley. Serves 5.
