Lemon Pepper Baked Orange Roughy

2 Tbls Butter

2/3 cup Bisquick baking mix

¼ cup yellow cornmeal

½ tsp lemon pepper seasoning salt

½ tsp salt

1 egg

2 Tbls water

1 lb orange roughy fillets

Heat oven to 425 degrees. Melt butter in 9 X 13 pan in oven.

Stir Bisquick, cornmeal, lemon pepper seasoning salt and salt together

dish. In separate bowl, mix egg & water together. Dip fish into egg

mixture and then coat with Bisquick mixture. Place in pan and bake

uncovered for 10 minutes. Turn fillets with spatula and bake 15

minutes longer ore until fillets flake easily with fork.
