Squid with Black Bean Sauce
from the Gold Coast Lady Anglers

1 lb squid rings

2 Tablespoons all pupose flour

½ tsp salt

1 green bell pepper

2 tablespoon peanut oil

1 red onion sliced

5 ¾ jar black bean sauce

Rinse squid thoroughly and drain on absorbent paper towels

Mix flour and salt together in bowl and add squid rings and toss until evenly coated.

Seed green pepper and slice into thin strips

Heat oil in wok or heavy-bottomed skillet. Add pepper slices and red onion and stir fry for about 2 minutes until vegetables begin to soften. Add squid rings and cook for 5 minutes more. Be careful not to OVERCOOK the squid.

Add black bean sauce and heat thru until the juices are bubbling. Serve immediately.

Delicious as is or served over white rice.
